1 Tsp. Olive Oil
2 Eggs
1/4 Tsp. Salt
1/4 Tsp. ground pepper
1/2 Onion chopped
1/4 Red Bell Pepper
1/4 Green Bell Pepper
1/4 C. shredded reduced-fat cheddar cheese
Whip til frothy: eggs, salt and pepper in a bowl. Saute the onion and peppers in the olive oil.
Pour egg mixture into pan, gently stir until slightly firm. (3-5 mins)
Add Cheddar Cheese at the end...let melt. Cut frittata in half, roll onto a plate, top with salsa.
Jalapeno Salsa
1 Large Tomato
1/4 sm Onion
3 Jalapeno Peppers, seeded (leave the seeds in for HOT)
Salt...a couple pinches
4 TBSP finely minced Cilantro
1/4 of a Lime juice, (optional)
Chop into small pieces and combine.
