Chili Beef with Basil
Chili Beef with Basil
6 T Peanut oil
16-20 large fresh whole basil leaves
10 oz Sirloin steak
2 T fish sauce
1 tsp dark brown sugar
2 Red fresh chilies, sliced into rings
3 cloves garlic, chopped
1 tsp fresh ginger, chopped
1 shallot, thinly sliced
2 T fresh basil, finely chopped
lemon juice, squeeze
salt and pepper
Thai jasmine rice
Heat the oil in a wok and, when hot, add the whole basil leaves and
fry for about 1 minute, until crisp and golden. Drain on paper
towels. Remove the wok from the heat and pour off all but 2 T of the
oil.
Cut the steak across the grain into thin strips. Combine the fish
sauce and sugar in a bowl. Add the beef, mix well, then let marinade
for about 30 minutes.
Reheat the oil until hot, add the chilies, garlic, ginger and
shallot and stir-fry for 30 seconds. Add the beef and chopped basil,
then stir-fry for about 3 minutes. Flavor with lemon juice and salt
and pepper to taste.
Transfer to a warmed serving plate, scatter the fried whole basil
leaves on top to garnish and serve immediately with Thai jasmine
rice.
