Chipotle Braised Beef with Corn and Cilantro
Chipotle Braised Beef with Corn and Cilantro
1 1/2 pounds cubed stewing beef, cut into smaller pieces if large
salt and pepper to taste
1/4 cup flour
3 tbsps. vegetable oil
1 medium onion, halved and thinly sliced
1 medium green pepper, cut into 1/2" cubes
2 garlic cloves, crushed
3/4 cup lager beer
14 tin diced tomatoes
1 tbsp. tomato paste
1 bay leaf
1 tsp. ground cumin
2 chipotle peppers, finely chopped
1/2 tsp. sugar
1 cup frozen corn kernels
1/4 cup chopped fresh cilantro
Preheat the oven to 350 degrees. Season the beef with salt and pepper and coat in flour, shaking off excess. Heat the oil in a Dutch oven or large oven-proof skillet over medium-high heat. Cook the beef until brown on all sides. Add the onions, peppers and garlic and cook 3 to 4 minutes more. Stir in the beer, diced tomato, tomato paste, bay leaf, cumin, chipotle pepper and sugar, then bring to a simmer. Cover and cook in the oven for 60 minutes. Uncover and cook 20 to 30 minutes more, or until the beef is tender. Stir in corn and cilantro and heat through, about 3-4 minutes. Season with salt and pepper and serve.
