Braised Beefsteak
3 lbs. top or bottom round steak, 2" thick
2/3 cup flour
1 t. salt
1/2 t. black pepper
4 T. bacon fat or butter
6 cloves garlic, sliced
2 cans (12 oz. each) beer
1/4 cup cider vinegar
2 t. dry mustard
1 recipe corn dumplings (recipe follows)
Trim steak and cut into 6 serving size pieces. Mix flour, salt and pepper. Sprinkle some over steaks and pound into meat with the side of a heavy plate or dull side of a heavy knife. Continue adding flour and pounding until both sides of steaks will absorb no more. Set aside to mellow for 20 minute. Heat bacon fat in a large Dutch oven; Brown steaks on all sides. Sprinkle garlic over meat. Combine beer, vinegar and mustard; pour over the meat. Cover; bring to a boil and cook at a slow boil for 1 1/2 hours until very tender. May be cooked in a 325 oven. Remove meat fro Dutch oven; keep warm. If cooling liquid is low, add water to make 4 or 5 cups. Bring to boil. Drop dumplings into boiling liquid by spoonfuls. Cover and cook over low heat for 15 to 20 minutes. Note: For lighter dumplings, do not lift lid when cooking.
Corn Dumplings:
Combine 1 1/2 cups flour, 2 t. baking powder and 1/2 t.salt in a mixing bowl. Add 1/2 cup milk and 3/4 cup cooked corn kernels, mixing just until dry ingredients are moistened. Cook as directed above. Makes 12 dumplings.
