Ring Around Meatballs
1 small can mushrooms
milk (less than 1/2 cup)
1 lb. ground beef
3/4 cup soft bread crumbs
2 T onion, chopped
1 tsp. Worcestershire sauce
salt and pepper to taste
1 egg, beaten
2 large green bell peppers
2 T catsup
2 T grated cheese
Drain mushrooms; reserve liquid. Add enough milk to liquid to make 1/2 cup
liquid. Combine ground beef, mushrooms, liquid, bread crumbs, onion,
Worcestershire sauce, salt, pepper and egg. Clean bell peppers; cut into 6
rings. Place rings in shallow baking pan. Make 6 large meatballs and pack
into bell pepper rings. Bake at 350 degrees for 35 minutes. Combine catsup
and grated cheese and spoon over meatballs. Continue baking for 10 more
minutes.
