Avocados with Ham
3 ripe Haas avocados, halved, pitted and quartered
Juice of 1 lemon
1/4 lb. sliced Serrano, Deli ham, OR proscuitto
Extra virgin olive oil, for drizzling
2 TB chopped fresh cilantro
Salt and ground black pepper, to your taste
Halve each half avocado lengthwise and arrange quartered avocados on a
platter.
Heat lemon for 30 seconds on high in microwave to release the juice.
Drizzle avocados with lemon juice; wrap with ham, then continue to dress with
extra virgin olive oil, cilantro, salt and pepper. Serve.
Yield: 4 servings.
