Mushroom Appetizer
1 pound fresh mushrooms
1/2 cup Wesson Oil
2 1/2 T. wine vinegar
1 clove garlic, chopped fine
1 large onion, chopped fine
1 2/ t. salt
1/2 t. pepper
1/2 t. sugar
2 sprigs parsley, chopped
1/8 t. oregano
1/8 t. allspice
1/8 t. cloves
few dashes Louisiana Hot Sauce or red pepper to taste
1 can tomato juice (12 oz)
1 T. flour
Slice mushrooms an set aside. Combine the rest of the ingredients in a pan and simmer for 5 minutes to blend the flavor. Add mushrooms, making sure they are covered with the liquid. simmer for 15 minutes. Mix one tablespoon of flour with a little water to make a thin paste. With mushroom mixture eon a low flame, add a little of the flour mixture at a time until the juice is the thickness of gravy. Cool thoroughly. Serve on lettuce leaves Will serve fro 4 to 8 persons, depending on size of serving Won Second Prize of $1,000--Appetizer Salad Category in the 1977 Wesson "Salad of the Year" contest, Laura E.
