Spicy Carrot And Sweet Potato Dip
Spicy Carrot And Sweet Potato Dip
1 Lb. carrots -- cut in 1-inch chunks
1/2 Lb. sweet potatoes -- peeled and cut in
1 inch chunks
2 Cloves garlic -- roughly chopped
1 1/2 Tsps. ground cumin
1/2 Tsp. ground coriander
1/4 Tsp. cayenne pepper
3 Tbsps. extra virgin olive oil
2 Tbsps. balsamic vinegar
Salt
Pita chips or crudités
In a large saucepan, bring carrots and sweet potatoes
to a boil in enough water to cover. Reduce heat and
simmer 15 minutes or until vegetables are soft. Drain.
Transfer to a food processor, and add garlic, cumin,
coriander, cayenne, oil and vinegar. Process until
puréed. Season to taste with salt. Serve warm with
pita chips. Serves 8
