Cool Gazpacho Dip
1 pkg. (8 oz.) cream cheese, softened
1/4 cup sour cream
1/2 cup shredded cheddar cheese
2 tablespoons minced fresh cilantro
1 garlic clove, pressed
1 small tomato, seeded and chopped
2 green onions, sliced
1/3 cup chopped cucumber
In a medium bowl, combine cream cheese and sour cream;
mix well. Stir in cheddar, cilantro and garlic. Cover; chill 2-3
hours for flavors to blend. Transfer to 8 or 9-inch pie plate
just before serving. Top with tomato, onion and cucumber.
Serve w/ crackers, etc.
